Mushroom pasta and orange salad with beetroot

The recipe consists of two parts. Hugo starts making mushroom pasta. Later in the recipe, you can read how to prepare beetroot and orange salad.

Mushroom pasta

  • (Vegetarian) Main course for 4 people
  • Preparation: about 25 minutes

ingredients

  • 3 (old) sandwiches
  • 1/3 handful of thyme
  • 50 gr. Peeled walnuts
  • Salt and Pepper
  • Neutral olive oil
  • 1 onion
  • 2 cloves of garlic
  • 350 gr. Mixed mushroom
  • 75 gr. watercress

Additional supplies: Food processor

How to prepare

Step 1: Preheat the oven to 190°C (top temperature).

Step 2: Roughly chop the bread, remove the leaves from two thyme branches and grind them with the nuts in a food processor.

Step 3: Season with salt and pepper and mix in a little oil.

Step 4: Spread the breadcrumbs over the baking tray, then put them in the oven for about 10 minutes until they are golden brown and crispy.

Step 5: Peel and chop the onion. Peel and chop the garlic. Heat an amount of oil in a frying pan and fry the onions and garlic.

Step 6: Roughly chop the mushrooms. Grind it well in a food processor or chop it finely with a knife. Chop the remaining thyme.

Step 7: Add the mushrooms and herbs to the onions and sauté for about 15 minutes until the mushrooms turn brown and the moisture is removed. Season with salt and pepper.

Step 8: Meanwhile, cook pasta according to instructions. Collect some of the cooking liquid and add it to the mushrooms until they are slightly creamy.

Step 9: Mix pasta and arugula with mushrooms.

Step 10: Divide the pasta between plates and sprinkle the crunchy crumbs over it.

How to prepare

Step 1: Cut the beets into cubes or slices.

Step 2: Wash half the peel of an orange and grate it, then put it in a bowl with the beets.

Step 3: Peel off the orange peel thickly. Cut the parts from between the membranes.

Step 4: Mix beets and oranges. Season with salt, hot pepper, vinegar and oil.

Step 5: Toast the nuts in a dry frying pan with a little salt.

Step 6: Mix arugula with beets and oranges and transfer to a bowl.

Step 7: Roughly chop the nuts and sprinkle them over the salad.
